MAPLE ROASTED PEACHES ON TOAST

Sweet caramelised peaches atop crusty toasted sourdough with yoghurt and crunchy pistachios. It's one of the best brunches ever!

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 2 large slices

Ingredients

  • 3 fresh ripe peaches
  • 2 tbsp extra virgin olive oil
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 large slices sourdough toasted
  • 4 tbsp natural yoghurt (I use soy yoghurt)
  • to serve: chopped toasted pistachios

Instructions

  1. Preheat oven to 160°c (fan assisted)/350°f/gas 4.
  2. Halve and pit the peaches, then place into an ovenproof dish, cut side up.
  3. Combine the olive oil, maple syrup, brown sugar and cinnamon in a small bowl and mix well. Spoon the mixture over the peaches, then bake for 25-30 minutes, or until soft in the middle and caramelised on top.
  4. Spread the toasted sourdough with vegan yoghurt, then top with the roasted peaches. Serve sprinkled with chopped pistachios and drizzled with any liquid left in the baking dish.
