CHOCOLATE CAKE BAKED OATS

Cake for breakfast? It doesn't get much better than that!

Prep Time 25 minutes
Cook Time 30 minutes
Total Time 55 minutes
Servings 1 person

Ingredients

  • 1 tbsp flaxseed
  • 45 g oats
  • 2 tbsp cocoa powder
  • 1 small banana
  • 1/2 tsp baking powder
  • 1 tbsp maple syrup
  • 125 ml oat milk
  • 1-2 tbsp roughly chopped dark chocolate (I use 70%)
  • to serve: vegan yoghurt, almond butter, berries & extra chopped dark chocolate

Instructions

  1. Mix the flaxseed with 3 tbsp of warm water. Refrigerate for 20 minutes, until thickened and gloopy.
  2. Preheat the oven to 170°c (fan assisted)/375°f/gas 5.
  3. Combine the oats, cocoa powder, banana, baking powder, maple syrup, oat milk and flaxseed mixture in a food processor. Blend until completely smooth.

  4. Pour the mixture into a small ovenproof dish and sprinkle over the chopped dark chocolate. Bake for 25-30 mins, or until springy to touch.

  5. Serve warm topped with yoghurt, almond butter, berries and extra chopped dark chocolate.
