THE BEST SCRAMBLED TOFU
A recipe every vegan should have up their sleeve!

Ingredients
- 280 g extra-firm tofu
- olive oil
- 3 tbsp nutritional yeast
- 1/2 tsp ground turmeric
- 1 tbsp tahini
- oat milk
- sea salt & freshly ground black pepper
Instructions

Remove your tofu from its pack and dry it with a tea towel. Chop it into chunks, then use your fingers to crumble it into small pieces.

Heat a good glug of olive oil in a frying pan set over a medium heat. Once hot, add the tofu and cook for 3-4 minutes, stirring occasionally, or until any water from the tofu has evaporated.

Add the nutritional yeast, turmeric and a generous amount of salt and pepper, then cook for a further 5 minutes, or until combined and golden. Stir through the tahini and a dash of oat milk, then taste and adjust the seasoning, if needed. The more milk you add, the looser the consistency will become, so add more if you prefer (I like it with lots in!).

Serve the tofu scramble over toasted crusty bread and finish with a good crack of black pepper.
