STICKY SESAME TOFU

This is one of the most delicious 30-minute meals you'll ever make. It's heavenly!

Cook Time 20 minutes

Servings 2 servings

Ingredients

  • 280 g extra firm tofu
  • 2 tbsp cornflour
  • 3 tbsp toasted sesame oil
  • 1 thumb-sized piece ginger grated
  • 2 garlic cloves grated
  • 1 tbsp sesame seeds
  • sea salt
  • to serve: white rice, spring onions, chilli flakes

FOR THE SAUCE

  • 60 ml soy sauce
  • 30 ml rice wine vinegar
  • 1 tbsp sriracha
  • 2 tbsp brown sugar
  • 1 tbsp corn flour mixed with 1 tbsp water

Instructions

  1. Start by making the sauce. Combine the soy sauce, rice wine vinegar, sriracha, brown sugar and cornflour in a jug and whisk well, until smooth.

  2. Use a clean tea towel to press the tofu and remove any excess moisture, then break it apart into small irregular chunks and place into a mixing bowl. Add the cornflour and a good pinch of salt and mix well to coat the tofu.

  3. Heat 2 tbsp of sesame oil in a large frying pan or wok over a medium-high heat. Once hot, fry the tofu for 5-6 minutes, stirring constantly, until golden brown and crispy. Remove from the pan and set aside.

  4. Return the same pan back over a medium-high heat and add the remaining sesame oil. Once hot, add the ginger and garlic and fry for 20-30 seconds, just to soften. Pour in the sauce and let it bubble away, stirring frequently, for 3-4 minutes, or until it is sticky and will coat the back of a spoon. Taste and adjust the seasoning, if needed.

  5. Add the fried tofu and sesame seeds into the pan and stir well to combine. Serve with rice, slices of spring onion and a sprinkling of chilli flakes.
