This is one of the most delicious 30-minute meals you'll ever make. It's heavenly!
Start by making the sauce. Combine the soy sauce, rice wine vinegar, sriracha, brown sugar and cornflour in a jug and whisk well, until smooth.
Use a clean tea towel to press the tofu and remove any excess moisture, then break it apart into small irregular chunks and place into a mixing bowl. Add the cornflour and a good pinch of salt and mix well to coat the tofu.
Heat 2 tbsp of sesame oil in a large frying pan or wok over a medium-high heat. Once hot, fry the tofu for 5-6 minutes, stirring constantly, until golden brown and crispy. Remove from the pan and set aside.
Return the same pan back over a medium-high heat and add the remaining sesame oil. Once hot, add the ginger and garlic and fry for 20-30 seconds, just to soften. Pour in the sauce and let it bubble away, stirring frequently, for 3-4 minutes, or until it is sticky and will coat the back of a spoon. Taste and adjust the seasoning, if needed.
Add the fried tofu and sesame seeds into the pan and stir well to combine. Serve with rice, slices of spring onion and a sprinkling of chilli flakes.
