SMOKY VEGAN BURGERS WITH ROMESCO SAUCE

Romesco is my sauce of the summer and it works so perfectly in these burgers. They will instantly elevate your BBQ.

Cook Time 10 minutes
Total Time 40 minutes
Servings 4 burgers

Ingredients

  • olive oil
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 250 g vegan mince
  • 1 tsp sweet smoked paprika
  • 10 g parsley finely chopped
  • 2 tbsp vegan nduja
  • 25 g breadcrumbs
  • salt & freshly ground black pepper
  • to serve: lettuce, tomatoes, vegan cheese, burger buns

ROMESCO SAUCE

  • 100 g blanched almonds toasted
  • 200 g roasted red peppers (from a jar), drained
  • 1 garlic clove sliced
  • 1 tbsp sherry vinegar
  • 1 tsp smoked paprika
  • extra virgin olive oil

Instructions

  1. Heat a frying pan over a medium heat and add a good glug of oil. Add the onion and a pinch of salt and fry for 8-10 minutes, or until soft and translucent. Add the garlic and fry for a further minute, just to soften. Allow to cool slightly.

  2. Tip the onion mixture into a mixing bowl and combine with the vegan mince, paprika, parsley, vegan nduja, breadcrumbs and a good pinch of salt and black pepper and mix well to combine. If your vegan mince if really dry, you may need to add a few spoonfuls of water here to bring it together. Use your hands to form the mixture into four even patties, then refrigerate until ready to cook.

  3. To make the romesco sauce, combine the almonds, red peppers, garlic, sherry vinegar, smoked paprika and a really good pinch of salt and black pepper in a food processor. Blitz the mixture, adding the olive oil in a thin stream through the hole in the top, until the sauce is smooth and creamy. Taste and adjust the seasoning, if needed.
  4. To cook the burgers, heat a large frying pan over a medium heat and add a good glug of olive oil. Fry for 4-5 minutes each side, or until cooked all the way through and darkening on the edges (or you can cook them on the bbq!).

  5. Layer the lettuce, tomatoes, burgers, cheese and a good few spoonfuls of romesco sauce between the buns. Serve with the remaining romesco sauce on the side.
