STICKY MUSHROOM SKEWERS

It's truly amazing what you can do with mushrooms. These skewers are juicy, crispy and perfect for the bbq!

Prep Time 25 minutes
Cook Time 10 minutes
Total Time 35 minutes
Servings 6 -8 skewers

Ingredients

  • 2 tbsp wholegrain mustard
  • 1 tbsp neutral oil (vegetable or sunflower)
  • 3 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 300 g king oyster mushrooms

Instructions

  1. Start with making the marinade. Combine the mustard, oil, maple syrup, soy sauce and ketchup in a mixing bowl. Taste and adjust the seasoning, if needed.
  2. Use your fingers to shred the king oyster mushrooms into long strips and stir them into the marinade. Cover and allow to sit for 20-30 minutes.
  3. Stack the marinated mushroom strips between 6-8 skewers, pressing them tightly together. Oil the bars of your bbq (or you can cook them in a griddle pan), then grill the mushroom skewers over a medium heat, brushing with the remaining marinade every time you turn them, until crispy and starting to char. Serve brushed with a little more marinade.
