BALSAMIC STRAWBERRIES & STRACCIATELLA

Definitely a recipe to impress! Sweet strawberries, sharp balsamic and creamy stracciatella has to be one of the best combinations out there.

Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 1 plate

Ingredients

  • 500 g strawberries halved
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 175 g vegan stracciatella
  • 10 g basil finely chopped
  • salt & freshly ground black pepper
  • to serve: crusty bread, chilli flakes (optional)

Instructions

  1. Preheat the oven to 160°c (fan assisted)/350°f/gas 4.
  2. Combine the strawberries, balsamic vinegar, maple syrup and a big pinch of salt and black pepper in a baking dish. Give everything a good mix, then roast for 30-35 minutes, or until the strawberries are soft and syrupy. Allow to cool slightly.
  3. Spread the vegan stracciatella over the bottom of a serving plate. Spoon the roasted strawberries on top and finish with the chopped basil, a really good crack of black pepper and a sprinkling of chilli flakes, if you like. Eat with lots of crusty bread.

Recipe Notes

I recommend the Julienne Bruno Superstraccia for the vegan stracciatella. They do some of the best vegan cheese out there!
