ROASTED APRICOT TOAST WITH THYME & STRACCIATELLA

The most incredible slice of toast you will ever make. I like to make the roasted apricots on their own sometimes too – they are amazing with yoghurt and granola for breakfast.

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 2 slices

Ingredients

  • 4 fresh ripe apricots
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 2 tbsp soft light brown sugar
  • 2 sprigs of thyme plus extra to serve
  • 2 large slices sourdough toasted
  • vegan stracciatella
  • freshly ground black pepper

Instructions

  1. Preheat oven to 160°c (fan assisted)/350°f/gas 4.
  2. Halve and pit the apricots, then combine with the olive oil, maple syrup, brown sugar and thyme in an ovenproof dish. Use your hands to give everything a mix, then arrange the apricots cut side up and roast for 20-25 minutes, or until soft and slightly caramelised.
  3. Spread the toasted sourdough with a few generous spoonfuls of vegan stracciatella and top with the roasted apricots. Drizzle with any liquid left in the baking dish and finish with a sprinkling of fresh thyme and a good crack of black pepper.
