MISO & SESAME ROASTED RADISHES

Ever tried your radishes roasted? It will shock you just how delicious they are.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 4 servings

Ingredients

  • 500 g radishes trimmed & halved if large
  • toasted sesame oil
  • 1 heaped tbsp miso paste
  • 35 g vegan butter softened
  • 1/2 tbsp soy sauce
  • 2 tsp sesame seeds
  • 1 spring onion finely sliced
  • salt

Instructions

  1. Preheat the oven to 180°c (fan assisted)/390°f/gas 6.
  2. Combine the radishes and a good drizzle of sesame oil in a baking dish. Season with a generous pinch of salt, then use your hands to mix everything together. Roast for 15 minutes.
  3. Meanwhile, combine the miso paste, butter and soy sauce in a bowl and mix well.
  4. Pour the miso glaze over the radishes and use a wooden spoon to mix everything together. Return the radishes to the oven for a further 10-15 minutes, or until the radishes are soft all the way through and the glaze is sticky. Mix the sesame seeds and most of the spring onion through the roasted radishes and serve sprinkled with the remaining spring onion.
