MISO ROASTED BRUSSELS SPROUTS WITH SESAME BREADCRUMBS

Whether you are a sprout lover or hater, you have to try this recipe. It’s the way sprouts deserve to be treated – with love, care & miso.

Servings 4 servings

Ingredients

  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 2 tbsp toasted sesame oil
  • 1 garlic clove grated
  • 2 tbsp neutral oil (vegetable or sunflower)
  • 500 g Brussels sprouts trimmed & halved

BREADCRUMB TOPPING

  • 1 tbsp vegan butter
  • 1 tsp miso paste
  • 20 g panko breadcrumbs
  • 2 tsp sesame seeds

Instructions

  1. Preheat the oven to 180°c (fan-assisted)/390°f/gas 6.
  2. Combine the miso paste, soy sauce, sesame oil and garlic in a small bowl and whisk well until smooth.
  3. Heat a cast iron skillet (or an oven-safe frying pan) over a medium-high heat and add the oil. Once hot, add the Brussels sprouts and fry for 8-10 minutes, stirring regularly, until slightly charred. Remove from the heat and add the miso dressing. Stir well, then transfer the whole pan into the oven to roast for 15-20 minutes, or until sticky and golden.

  4. Meanwhile, you can make the breadcrumb topping. Heat a frying pan over a low heat and add the butter and miso paste. Stir until melted, then add the breadcrumbs and sesame seeds. Fry for 2-3 minutes, stirring regularly, until golden and crispy.

  5. Sprinkle the breadcrumbs over the roasted sprouts and gently stir just before serving.
