CHRISTMAS GRANOLA

A festive version of my favourite ever granola. Laced with Christmas spices, orange zest, pecans and cranberries, it's the ultimate breakfast for the month of December.

Prep Time 10 minutes
Cook Time 50 minutes
Total Time 1 hour
Servings 1 large jar

Ingredients

  • 50 g vegan butter melted
  • 150 g maple syrup
  • zest of 1 orange
  • 250 g chunky oats
  • 40 g plain flour
  • 25 g pumpkin seeds
  • 70 g pecan nuts
  • 1 tsp ground ginger
  • 2 tsp mixed spice
  • pinch of salt
  • 70 g dried cranberries

Instructions

  1. Preheat the oven to 130°c (fan assisted)/300°f/gas 2.
  2. Combine the melted butter, maple syrup and orange zest in a large mixing bowl.
  3. Add the oats, flour, pumpkin seeds, pecan nuts, ginger, mixed spice and salt and mix well, until everything is evenly combined. Pour the mixture out onto a lined baking tray and spread into one even layer, compacting it down with the back of the spoon (this will help with the chunks!). Bake for 40-50 minutes, stirring once halfway through, until crispy and golden brown.

  4. Allow the granola to cool completely, then mix through the dried cranberries. Store in an airtight container for up to a month.

      Mixed spice is very similar to pumpkin spice x
