CHRISTMAS GRANOLA
A festive version of my favourite ever granola. Laced with Christmas spices, orange zest, pecans and cranberries, it's the ultimate breakfast for the month of December.

Ingredients
- 50 g vegan butter melted
- 150 g maple syrup
- zest of 1 orange
- 250 g chunky oats
- 40 g plain flour
- 25 g pumpkin seeds
- 70 g pecan nuts
- 1 tsp ground ginger
- 2 tsp mixed spice
- pinch of salt
- 70 g dried cranberries
Instructions

Preheat the oven to 130°c (fan assisted)/300°f/gas 2.

Combine the melted butter, maple syrup and orange zest in a large mixing bowl.

Add the oats, flour, pumpkin seeds, pecan nuts, ginger, mixed spice and salt and mix well, until everything is evenly combined. Pour the mixture out onto a lined baking tray and spread into one even layer, compacting it down with the back of the spoon (this will help with the chunks!). Bake for 40-50 minutes, stirring once halfway through, until crispy and golden brown.

Allow the granola to cool completely, then mix through the dried cranberries. Store in an airtight container for up to a month.
