CARAMEL APPLE PORRIDGE
All the flavours of a caramel apple in a steaming hot bowl of oats. It's the autumn breakfast of dreams!

Servings 2 servings (with leftover caramel)
Ingredients
- 1 tbsp vegan butter
- 2 eating apples diced into small chunks
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 100 g chunky oats
- 500 ml milk (I use oat milk)
- to serve: pumpkin seeds
QUICK CARAMEL SAUCE
- 35 g vegan butter
- 40 g light brown soft sugar
- 2 tbsp oat milk
- pinch sea salt
Instructions

Start by making the quick caramel sauce. Combine the vegan butter, light brown soft sugar, oat milk and salt in a small saucepan set over a low heat. Stir until melted, then bring to a boil. Boil for 2-3 minutes, stirring constantly, or until when the caramel is taken off the heat, it will coat the back of a spoon.

Meanwhile, to make the apples, melt the butter in a frying pan set over a medium heat. Once hot, add the diced apple, maple syrup and cinnamon. Stir well, then fry for 5-6 minutes, or until the apple has softened and is golden brown.

Finally, combine the oats and milk in medium saucepan and stir to combine. Bring to a simmer over medium heat and stir regularly until the porridge has reached your desired consistency.

To serve, pour the porridge out into a bowl and top with the apples, caramel sauce and a sprinkling of pumpkin seeds.
