VERY UNTRADITIONAL FRENCH ONION SOUP

I don’t think onions get enough love. When you think about it, they probably are the most versatile and widely used vegetable, although it’s very rare they get to take centre stage. So that’s what we're doing in this recipe – taking the humble onion and making it into something wonderful.

Prep Time 20 minutes
Cook Time 50 minutes
Total Time 1 hour 10 minutes
Servings 4 servings

Ingredients

  • 60 g plant-based butter
  • 6 large onions
  • 1.5 tbsp golden caster sugar
  • 200 ml dry white wine
  • 2 L vegetable stock
  • 3 tbsp soy sauce
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 400 g can butter beans drained & rinsed
  • 2 large handfuls kale or cavolo nero hard stems removed
  • salt & freshly ground black pepper

Instructions

  1. Heat the butter in a large pan over medium-high heat. Add the onions and a good pinch of salt and fry, stirring frequently, for 2-3 minutes. Reduce the heat to low, cover the pan with a lid and cook for 10-12 minutes, stirring occasionally, until the onions have softened slightly.
  2. Sprinkle the sugar over the onions and continue to cook, uncovered, for 30-35 minutes, stirring regularly, until the onions are sticky and caramelised.

  3. Increase the heat and pour in the wine. Allow to simmer and bubble for 2-3 minutes, until almost evaporated. Then add the stock, soy sauce, bay leaves and thyme. Bring everything to a boil, and cook for 8-10 minutes, or until the stock has reduced slightly.

  4. Finally, stir through the beans and kale or cavolo nero, until wilted. Remove the herbs from the soup and divide between bowls. Serve with a crack of black pepper and bread, if you like.
