SIMPLE KALE SALAD WITH LEMON & TAHINI DRESSING
I think kale is a misunderstood vegetable. So often I feel it’s only eaten because it’s good for you, and not because it’s delicious. But as with most ingredients, just a little love and attention can transform them into something truly wonderful. Try this salad, and you'll be as obsessed with kale as I am.
Ingredients
- 85 g tahini
- juice of 1 lemon
- 1 tbsp maple syrup
- 2 tsp wholegrain mustard
- 3 tbsp extra virgin olive oil
- 400 g kale hard stems removed & roughly chopped
- 3 tbsp nutritional yeast
- salt & freshly ground black pepper
Instructions

Combine the tahini, lemon juice, maple syrup, mustard, olive oil, and a generous pinch of salt & black pepper in a bowl. Stir well, then whisk in 1-2 tbsp water to thin out the dressing into a smooth pourable consistency. Taste and adjust the seasoning, if needed.

In a large mixing bowl, combine the kale and 1/3 of the dressing. Use your hands to scrunch and massage the dressing into the kale for 3-4 minutes, until the kale has darkened in colour and halved in size.

Stir the nutritional yeast and remaining dressing through the kale, then taste and adjust the seasoning, if needed. Serve it as the base of a salad, or on its own as a side dish – however you wish.
