



RAW COURGETTE SALAD WITH BASIL, CHILLI & LEMON
Don’t be put off by the fact the courgette is raw. It keeps a nice crunch and makes this salad super fresh. Made in only 10 minutes, it can't be beaten when the sun is shining!

Ingredients
- 30 g fresh basil finely chopped
- 1 red chilli finely chopped
- 1 garlic clove minced
- juice of 1 lemon
- 3 tbsp extra virgin olive oil
- 3 courgettes
- salt & freshly ground black pepper
- to serve: vegan stracciatella, toasted pinenuts, lemon zest
Instructions

To make the dressing, combine the chopped basil, chilli, garlic, lemon juice, olive oil and a good pinch of salt & black pepper in a large mixing bowl. Taste and adjust the seasoning, if needed.

Use a speed peeler to peel the courgettes into thin ribbons. Add them to the dressing and mix well to combine.

Arrange the dressed courgette ribbons on a serving plate. Serve topped with dollops of the vegan stracciatella, a sprinkling of toasted pinenuts and a grating of lemon zest. Finish with a nice crack of black pepper.
