PEANUT BUTTER & ROASTED RASPBERRY TOAST
Peanut butter & jam is my ultimate happy food. I'm not saying this version needs to replace the original, but the roasted raspberries just take it up a notch. It's amazing as a weekend breakfast!

Ingredients
- 250 g raspberries
- 2 tbsp golden caster sugar
- 1/2 tsp vanilla extract
- 2 large slices crusty bread toasted
- smooth peanut butter
- to serve: chopped roasted peanuts
Instructions

Preheat the oven to 160°C (fan assisted)/350°f/gas 4.

Combine the raspberries, golden caster sugar and vanilla extract in a small baking dish. Use your hands to give everything a mix, then bake for 10-15 minutes, or until the raspberries are soft and jammy.

Spread the toast generously with peanut butter. Spoon the roasted raspberries on top and finish with a sprinkling of roasted peanuts.
