PEANUT BUTTER & ROASTED RASPBERRY TOAST

Peanut butter & jam is my ultimate happy food. I'm not saying this version needs to replace the original, but the roasted raspberries just take it up a notch. It's amazing as a weekend breakfast!

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 2 slices

Ingredients

  • 250 g raspberries
  • 2 tbsp golden caster sugar
  • 1/2 tsp vanilla extract
  • 2 large slices crusty bread toasted
  • smooth peanut butter
  • to serve: chopped roasted peanuts

Instructions

  1. Preheat the oven to 160°C (fan assisted)/350°f/gas 4.
  2. Combine the raspberries, golden caster sugar and vanilla extract in a small baking dish. Use your hands to give everything a mix, then bake for 10-15 minutes, or until the raspberries are soft and jammy.

  3. Spread the toast generously with peanut butter. Spoon the roasted raspberries on top and finish with a sprinkling of roasted peanuts.
