HUMMUS & HARISSA ROASTED AUBERGINE SANDWICHES

Everyone loves a sandwich and this one, filled with roasted aubergine, harissa hummus, cucumber and pickled red cabbage, has to be one of the best. I've been making it on repeat!

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 2 sandwiches (with leftover aubergine)

Ingredients

  • 2 aubergine sliced into 2cm rounds
  • 2 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 100 g hummus
  • 2 ciabatta rolls
  • sea salt & freshly ground black pepper
  • to serve: sliced cucumber, pickled red cabbage, salad leaves

Instructions

  1. Preheat the oven to 200°c (fan assisted)/425°f/gas 7.
  2. Combine the sliced aubergine, 1 tbsp harissa paste, olive oil, garlic powder, smoked paprika and a good pinch of salt and black pepper in a large bowl. Use your hands to mix everything together and rub the spices into the aubergine, then arrange on a baking tray and roast for 30-35 minutes, turning halfway through, until lovely and soft.

  3. Meanwhile, mix together the hummus and remaining harissa paste until thoroughly combined.

  4. When the aubergine is ready, slice both ciabattas in half and lightly toast. Layer the harissa hummus, cucumber, roasted aubergine, pickled red cabbage and salad leaves between the slices, then chop in half and serve whilst still warm.
