CHUNKY MONKEY GRANOLA
Granola inspired by the classic Ben & Jerry's ice cream flavour. It's a great way to use up any spotty bananas you have in the fruit bowl. I make it on repeat!

Ingredients
- 2 ripe bananas mashed
- 4 tbsp coconut oil or butter melted
- 4 tbsp maple syrup
- pinch of salt
- 300 g jumbo oats
- 2 tbsp ground flaxseed
- 2 handfuls of walnuts or pecans roughly chopped
- 2 handfuls of chocolate chips (you can just chop up a bar into little chunks)
Instructions

Preheat the oven to 150°c (fan assisted)/170°c/gas 3.

In a large bowl, combine the mashed banana, melted coconut oil/butter, maple syrup and salt.

Add the oats, flaxseed and nuts and stir really well until everything is evenly coated.

Pour the granola out onto a lined baking tray and pat it into an even later. Bake for 45-50 minutes, giving it a mix halfway through to break up the larger chunks, until golden and crunchy.

Allow the granola to cool completely, then stir in chocolate. Transfer into an airtight container and enjoy however you wish.
