HEALTHY SNICKERS ICE POPS

These cute banana pops have all the flavour of a Snickers bar! They make a delicious healthy treat for a summer's day.

Prep Time 15 minutes
Total Time 15 minutes
Servings 6 ice pops

Ingredients

  • 3 bananas
  • 6 tbsp smooth peanut butter
  • 4 tsp coconut oil
  • 50 g dark chocolate
  • 75 g roasted peanuts finely chopped

Instructions

  1. Peel each banana and chop it in half. Push a lolly stick into the bottom of each half, to create 6 banana pops, then place onto a lined tray and freeze for 4 hours, or until solid.
  2. Once the banana pops have frozen solid, combine the peanut butter and half the coconut oil in a small microwave-safe bowl. Microwave in 20-second bursts, stirring in between, until combined and pourable. Repeat with the dark chocolate, combining with the remaining coconut oil and microwaving in 20-second bursts, until melted.
  3. Pour the chopped peanuts onto a plate. Take each frozen banana pop and dip it first into the peanut butter, then into the chocolate and then quickly into the peanuts, to create layers. Return to the tray and freeze for a further 30 minutes, just to let everything firm up.
  4. Transfer to an airtight container and enjoy whenever you wish!
