VEGAN CHOCOLATE ORANGE BROWNIES

The ultimate vegan chocolate brownies. Indulgent, gooey and oh so morish. These will be a favourite with the whole family.

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Servings 9 slices

Ingredients

  • 125 ml orange juice approx. 2 oranges
  • zest of 4 oranges
  • 4 tbsp ground flaxseed
  • 125 g vegan butter melted
  • 185 g caster sugar
  • 165 g soft light brown sugar
  • pinch of salt
  • 125 g plain flour
  • 100 g cocoa powder
  • 1 tsp baking powder
  • 50ml-100ml oat milk
  • 100 g dark orange chocolate roughly chopped

Instructions

  1. Preheat the oven to 160°c (fan assisted)/180°c/gas 4 and line a brownie tin with parchment paper.

  2. Mix the orange juice and zest with the flaxseed in a small bowl. Refrigerate for an hour until thick and gloopy.
  3. Whisk the melted vegan butter and both sugars together. Add the flaxseed mix and salt and whisk until evenly combined. Sift in the flour, cocoa powder and baking powder. Fold everything together until just combined, adding just enough oat milk until the mixture is glossy and will easily drop off a spoon.
  4. Fold in the orange chocolate. Pour the batter into the prepared tin, smooth over the top and bake for 35-40 minutes, until firm around the edges. The brownies may still be soft in the middle but will solidify as they cool.

  5. Remove from the oven and allow to cool completely before slicing and serving, with a scoop of ice cream if you wish.
