CAULIFLOWER CHEESE & GNOCCHI BAKE

Vegan comfort food at its absolute finest. This easy dinner will please the whole family!

Cook Time 25 minutes
Total Time 55 minutes
Servings 4 servings

Ingredients

  • 1 large cauliflower
  • 100 g plant-based butter
  • 2 cloves of garlic minced
  • 1 heaped tsp English mustard powder
  • 85 g plain flour
  • 900 ml unsweetened oat or soya milk
  • 125 g vegan cheddar cheese grated
  • 500 g fresh gnocchi
  • 75 g panko breadcrumbs
  • a few sprigs fresh thyme
  • sea salt & freshly ground black pepper
  • to serve: green side salad

Instructions

  1. Preheat the oven to 180°c (fan assisted)/350°c/gas 4.
  2. Chop the cauliflower into florets and its leaves into thirds. Steam or boil the cauliflower florets and leaves for 6-8 minutes, or until soft and cooked through. Drain and set aside.

  3. Meanwhile, melt the plant-based butter in a large pan over a medium heat. Once melted, add the garlic and English mustard powder. Cook for a minute or so before adding the flour and whisking vigorously to form a paste. Gradually add the milk a little at a time, whisking continuously, until smooth.

  4. Bring the sauce to a gentle simmer and cook, stirring frequently, for 10-15 minutes until thickened and glossy. Then stir in the grated vegan cheddar. Season well with salt and black pepper.

  5. Add the steamed cauliflower and fresh gnocchi into the sauce. Stir well to combine, then transfer the mixture to an ovenproof baking dish. Top with the panko breadcrumbs, a few sprigs of thyme and a crack of black pepper. Bake for 20-25 minutes, or until golden and bubbling. Serve with a green side salad.

    Hey! This one is confusing. Your tik Tok shows that you’re going to bake. Then you say pre heat oven. But then it says steam the cauliflower! What is it? Bake or steam?! Thanks!! This is my first recipe trial from you. So I’m excited. And imma try it baked 🙂

      Hey! This is a slightly different recipe to the one on tiktok! I originally steam the cauli in this recipe, but then I roasted it in the updated version! Both work – if you want to roast, pop it in the oven for 25 mins. The reason it says preheat the oven in this one is that you put it in the oven later on in the recipe! Hope that makes sense 🙂
