BANANA BREAD FRENCH TOAST
This really is as good as it sounds – you'll be letting the banana bread go stale on purpose!

Ingredients
- 225 ml oat milk
- 1 tbsp ground flaxseed
- 1 tsp vanilla extract
- ½ tsp ground sweet cinnamon
- vegan butter for frying
- 4 slices stale banana bread
- toppings: yoghurt, banana, pomegranate seeds & maple syrup
Instructions

Combine the oat milk, ground flaxseed, vanilla and cinnamon in a wide-rimmed bowl. Refrigerate for 20 minutes to allow to thicken.

Heat a large non-stick frying pan over medium heat and add a knob of butter to melt.

Dip the slices of banana bread into the flaxseed mixture and soak for a minute or so on either side. Gently add into the hot pan and fry for 2-3 minutes each side, or until golden brown.

Serve warm topped with yoghurt, fruit and a drizzle of maple syrup.
