BANANA BREAD FRENCH TOAST

This really is as good as it sounds – you'll be letting the banana bread go stale on purpose!

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 2 servings

Ingredients

  • 225 ml oat milk
  • 1 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • ½ tsp ground sweet cinnamon
  • vegan butter for frying
  • 4 slices stale banana bread
  • toppings: yoghurt, banana, pomegranate seeds & maple syrup

Instructions

  1. Combine the oat milk, ground flaxseed, vanilla and cinnamon in a wide-rimmed bowl. Refrigerate for 20 minutes to allow to thicken.

  2. Heat a large non-stick frying pan over medium heat and add a knob of butter to melt.
  3. Dip the slices of banana bread into the flaxseed mixture and soak for a minute or so on either side. Gently add into the hot pan and fry for 2-3 minutes each side, or until golden brown.
  4. Serve warm topped with yoghurt, fruit and a drizzle of maple syrup.
