STRAWBERRY & VANILLA CRUMBLE

Everyone loves a crumble! And this one, made with summery strawberries, is perfect for the warmer months.

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour
Servings 4 servings

Ingredients

  • 750 g strawberries
  • 3 tbsp brown sugar
  • 2 tsp vanilla extract
  • zest of 1 orange
  • to serve: ice cream, cream or custard

CRUMBLE TOPPING

  • 100 g rolled oats
  • 150 g plain flour
  • pinch of salt
  • 80 g brown sugar
  • 100 g vegan or regular butter chilled & cubed

Instructions

  1. Preheat the oven to 160°c (fan assisted)/350°f/gas mark 4.
  2. Remove the strawberry leaves and chop each one in half. Place into a medium ovenproof dish and mix with the brown sugar, vanilla extract and orange zest.

  3. To make the topping, combine the rolled oats, flour, salt, brown sugar and butter in a bowl. Rub the mixture between your fingers and thumbs until it is combined and resembles large breadcrumbs.

  4. Cover the strawberries with the crumble topping, then bake for 40-50 minutes, or until golden brown. Serve with ice cream, cream or custard.
