STRAWBERRY & VANILLA CRUMBLE
Everyone loves a crumble! And this one, made with summery strawberries, is perfect for the warmer months.

Ingredients
- 750 g strawberries
- 3 tbsp brown sugar
- 2 tsp vanilla extract
- zest of 1 orange
- to serve: ice cream, cream or custard
CRUMBLE TOPPING
- 100 g rolled oats
- 150 g plain flour
- pinch of salt
- 80 g brown sugar
- 100 g vegan or regular butter chilled & cubed
Instructions

Preheat the oven to 160°c (fan assisted)/350°f/gas mark 4.

Remove the strawberry leaves and chop each one in half. Place into a medium ovenproof dish and mix with the brown sugar, vanilla extract and orange zest.

To make the topping, combine the rolled oats, flour, salt, brown sugar and butter in a bowl. Rub the mixture between your fingers and thumbs until it is combined and resembles large breadcrumbs.

Cover the strawberries with the crumble topping, then bake for 40-50 minutes, or until golden brown. Serve with ice cream, cream or custard.
