RADISH BUTTER
I've taken inspiration from the French here, who like to eat their radishes dipped into butter and sprinkled with salt. My radish butter combines it all into one and is designed to be slathered generously over crusty bread – it's one of my favourite things to eat.
Ingredients
- 200 g bunch of radishes (breakfast radishes are my preference, but regular round radishes will do the job too)
- 125 g softened salted butter
- flaky sea salt
- to serve: crusty bread
Instructions

Coarsely grate the radishes with a box grater, then use your hands to squeeze out any excess liquid over the sink.

Beat the butter until smooth in a mixing bowl. Add the radishes and a good pinch of flaky salt, then stir well to combine. Taste and adjust the seasoning, if needed.

Spoon the radish butter onto parchment paper and wrap tightly into a log, or, spoon into a tupperware container and smooth over the top. Chill until the butter has set, then serve with lots of crusty bread and a pinch more flaky salt, if you like.
