LOVE HEART BISCUITS

Inspired by the classic Love Heart sweets, these are the cutest (or cheekiest…) biscuits for Valentine's Day.

Servings 20 biscuits

Ingredients

  • 200 g vegan butter (the type that comes in a block)
  • 1 tsp vanilla bean paste
  • 100 g caster sugar
  • pinch of sea salt
  • 50 g ground almonds
  • 250 g plain flour
  • red food colouring (gel or paste, not liquid)
  • water icing made very thick

Instructions

  1. Cream the butter, vanilla, sugar and salt together until creamy and lighter in colour (it’s much easier if you use an electric whisk for this).
  2. Add the ground almonds and sift in the flour, then stir until just combined. Add a few drops of food colouring and gently knead together, until the dough is evenly coloured (the amount you add will depend on how bright you would like the cookies and on which food colouring you are using. Start with less, as you can always add more). Form the mixture into a disk, wrap in cling film and chill for at least 30 minutes.

  3. Meanwhile, preheat the oven to 160°c (fan assisted)/355°f/gas 4 and line two baking trays with parchment paper.
  4. Roll out the chilled dough 2-3mm thick. Cut out hearts from the dough (depending on how large your cutter is will depend on the amount you get!) and place them onto the lined baking trays. Chill for a further 15 minutes, then bake for 10-15 minutes or until just starting to darken at the edges. Leave to cool completely.

  5. Fill a piping bag with the water icing and chop off a tiny bit of the end, to leave a very thin tip. Write phrases of your choice onto each biscuit (look at Love Heart sweets for inspiration!), or just pipe patterns onto the hearts, if you would prefer. Allow the icing to set before sharing with everyone you love.
