
A spritz to drink with your clementine-cured beetroot, whipped goats cheese, and rye crisps.
CLEMENTINE & CAMPARI SPRITZ
As the weather isn't quite saying 'Italian summer', I've winter-fied a classic Campari Spritz, with the addition of sweet, citrusy clementines.

Servings 1 serving
Ingredients
- ice
- 100 ml freshly-squeezed clementine juice (about 2-3 clementines)
- 50 ml campari
- 75 ml sparkling wine
- 1 tsp sugar syrup (optional)
- soda water to top
- clementine slices to serve
Instructions

Fill a large wine glass with ice. Add the clementine juice, Campari, sparkling wine and if using, the sugar syrup (see notes).

Give everything a stir, then top up the glass with the soda water. Garnish with a slice or two of clementine, if you like.
Recipe Notes
This is a bitter cocktail (think negroni-esque), if you prefer things a bit sweeter, you could add the sugar syrup.
