
Apples are at their best in the cooler months, and this cocktail puts them front and centre. It’s crisp and dry, with just a hint of sweetness. This cider cocktail is a delicious Aperitivo Time companion to my Leek, Gruyère & Parmesan Tart.


A CIDER COCKTAIL
Autumn in a glass! Even if you don't love cider, give this a go – it's crisp, golden, not too sweet.
Ingredients

- 75 ml still dry apple cider
- 25 ml vermouth (bianco or dry)
- 1-2 dashes aromatic bitters
- 10 ml simple syrup
- ice
- to serve: apple slice
Instructions

Combine the dry apple cider, vermouth, bitters, simple syrup and a handful of ice in a jug, or a cocktail shaker. Use a long spoon to stir for 30 seconds, or until the outside of the jug/shaker is ice cold.

Strain into a rocks glass with one fresh large ice cube, then garnish with the apple slice and you're done. Enjoy!
