A Kirsch Royale is a slightly more playful take on a classic champagne cocktail. Simple, a little nostalgic, and very easy to throw together.
Kirsch is a clear cherry brandy, traditionally made from fermented cherries, with a clean, almost almond-like finish. It’s not overly sweet, which is why it works so well here – it gives the drink depth without turning it into something syrupy.

Paired with a spoonful of maraschino cherry syrup, you get that familiar, slightly retro sweetness, balanced by the dryness of the fizz. As you top it up, everything lifts and lightens. Drinking it feels like a celebration!
The cherry at the bottom of the Kirsch Royale is part garnish, part ritual. It sinks slowly through the bubbles, and by the time you get to it, it’s soaked up everything in the glass.

Give it a gentle stir just before drinking to bring everything together. It’s bright, lightly boozy, and exactly the kind of drink you want to start an evening with.

KIRSCH ROYALE
A light, cherry-laced champagne cocktail made with kirsch and maraschino syrup. Simple, celebratory, and slightly nostalgic.
Ingredients
- 1/2 tbsp kirsch
- 1 tbsp maraschino cherry syrup (plus one of the cherries)
- champagne or cremant to top
Instructions
-
Combine the kirsch and maraschino cherry syrup at the bottom of a flute glass, then top up very gently with your fizz of choice. Carefully pop a marachino cherry into the glass and watch as it sinks to the bottom. Give everything a stir, just before drinking.
This pairs perfectly with my Balsamic Macerated Cherries and Burrata. Give it a go!
