
I have been making this recipe for years. It's perfect for a weeknight dinner as it only takes 5 minutes to prep. You won't believe how easy it is!
Combine the gnocchi, tomatoes, garlic, rosemary and a generous pinch of salt and black pepper on a baking tray. Drizzle everything with the oil, then stir to coat and combine.
Sprinkle the gnocchi with most of the basil, then give everything a good mix. Divide the gnocchi between two bowls and garnish with the remaining basil, a good few cracks of black pepper and a grating of vegan parmesan cheese.
