The most incredible slice of toast you will ever make. I like to make the roasted apricots on their own sometimes too - they are amazing with yoghurt and granola for breakfast.

Ingredients
4fresh ripe apricots
2tbspolive oil
1tbspmaple syrup
2tbspsoft light brown sugar
2sprigs ofthymeplus extra to serve
2large slicessourdoughtoasted
vegan stracciatella
freshly ground black pepper
Instructions
Preheat oven to 160°c (fan assisted)/350°f/gas 4.
Halve and pit the apricots, then combine with the olive oil, maple syrup, brown sugar and thyme in an ovenproof dish. Use your hands to give everything a mix, then arrange the apricots cut side up and roast for 20-25 minutes, or until soft and slightly caramelised.
Spread the toasted sourdough with a few generous spoonfuls of vegan stracciatella and top with the roasted apricots. Drizzle with any liquid left in the baking dish and finish with a sprinkling of fresh thyme and a good crack of black pepper.
