
It's not quite a soup, it's not quite a pasta dish, but whatever it is, it's utterly delicious.
Pour the vegetable stock into the pan and bring to a boil. Reduce the heat to a simmer, then add the pasta and a pinch of salt. Continue to cook for 8 minutes, before adding the spring greens. Simmer for a further 2-3 minutes, until the pasta is al dente, then remove from the heat. Stir through the oat milk, then taste and adjust the seasoning, if needed.
